While many pizza makers will tell you their sauce is the most important part of a pizza making process, at Bella Via we say the crust ties for top billing with the sauce, and gourmet pizza toppings tie with high quality fresh cheeses for second place. In other words, every component of our Long Island City pizzas is a crucial part of the whole – but the crust is the starting point.

Our pizza crust is made fresh daily, and baked to perfection in our unique, old fashioned, coal fire brick ovens for pizza that has just the right amount of crunch and chewiness. The coal fired oven delivers an unmatched crust no matter what toppings you love.

Once the crust is prepared, it’s time for the sauce – which is also prepared with fresh ingredients. San Marzano tomatoes for the base, and our special blend of herbs and spices create the tangy, delicious red sauce most of our customers love. For those not interested in red pizza sauce, we also create a smooth, creamy white sauce that is perfect for a broccoli rabe or a mushroom dotted pie.

Toppings come next. Of course we have fresh grated mozzarella, but the cheese train has more than one car. We can add a variety of cheeses depending on your tastes, and blend flavors expertly so no one flavor outweighs all the others.

The gourmet pizza toppings are next, and you can split them up across your huge family pizza if desired – don’t be afraid to ask for anchovies on one half and mushrooms on the other. More chopped San Marzano tomatoes, fresh green peppers, onions, sausage, pepperoni – the choices and combinations seem to be endless, so you’ll always have variety.

Once the pie is created, it’s slid into the piping hot brick oven (over 900 degrees!) where the coal fueled fire will bake the entire pizza quickly and thoroughly. It’s done when the crust is lightly browned on the bottom and edges, the cheese is bubbling, and the toppings are crisp tender, not soggy. The crust is always just a tiny bit chewy, but not floppy enough to crumple when you pick it up to take a bite.

The use of coal over wood means you get all of the individual flavors of each ingredient, without the smoky overpowering taste of wood smoke. Come visit us on Vernon Ave today and you’ll never look at pizza the same way again.
